Recipe: Fruit Cocktail Upside-Down Cake

Hannah is the baker in our family. I come up with ideas and Hannah makes them come to life. We tweaked this recipe from, substituting boxed cake mix for the from-scratch version. It turned out fabulously. 

This cake is super-moist, but the sweetness is not overwhelming. Overall, we rate it worth a repeat performance. We hope you enjoy our convenient twist on a traditional homespun cake.

3 tbsp butter

1/4 cup light brown sugar

1 can fruit cocktail, drained

1 box white or yellow cake mix, prepared


Melt the butter in the bottom of a bundt pan in the oven.

Sprinkle sugar over melted butter and stir.

Pour fruit cocktail over sugar-butter mixture.

Pour cake mix in last.

Bake according to cake mix instructions.

Allow to cool before serving. 

Store covered; do not refrigerate.
